Specialized Cookware

In addition to the basic cookware, there are many other types of cookware designed for preparing specific dishes or better accommodate your style of cooking.

  Griddle and Grill Pan

  Griddles and Grill Pans are wide, have low sides, can be round, square or rectangular and can fit over one or more stove burners. The Griddle has a flat surface that is ideal for pancakes and the Grill Pan has a ribbed surface for cooking steaks, chops, hamburgers and other foods where you want the cooking fats to drain away from the meat.

  Sauté or Sautéuse

  The Sauté Pan has a wide flat bottom, short straight sides and one long handle. Large sizes could also have a loop helper handle to aid in lifting the pan. The pan's shape is ideal for sautéing meats and vegetables and shallow braising. If the pan has an oven proof handle, it can also be used in the oven for preparing casseroles.

  Chef's Pan

  The Chef's Pan, Flared Sauté Pan or Evasee has one long handle and flared sides.

  Saucier/Windsor

  The Saucier or Windsor sauce pans have a small bottom surface with sloped sides and a wide opening. They are perfect for reducing liquids and preparing reduction sauces.
  Paella/Chef du Jour
  The Paella or Chef du Jour Pan has a wide flat bottom, rounded sides and usually loop handles. Originally the paella pan was used for cooking the Mediterranean dish paella. It has gained popularity because any sautéed dish or casserole can be prepared in this pan and it's elegant design and shape are perfect to serve at the table.

  Wok/Stir Fry

  A wok has a rounded bottom, sloped sides, and sits on a metal ring that raises the pan just above the heating surface. A wok can not be used on a glass or ceramic cooking surface. A Stir Fry or flat bottom Wok has a small flat bottom, designed to sit flat on the heating surface, and sloped sides. The sloped sides allow you to cook foods on the sides of the pan and away from the direct heat source.

  Omelet Pan

  Omelet Pans are a form of fry pan with a flat surface, gently sloped sides and flared edges. This allows omelets or other foods to easily slide from the pan. Many are manufactured with handles that are oven safe and these pans can be used to prepare German pancakes and other foods that require baking.

  Oval Fish

  The Oval Fish Pan or Poacher is excellent for poaching fish in wine or broth, poaching fruits, and steaming artichokes and other vegetables.
