 Spaetzle
Spaetzle is a dish of tiny noodles or dumplings made with flour, eggs, water or milk
and a pinch of nutmeg. German in origin, spaetzle is also a popular accompanying dish in
the Alcase region of northeastern France.
Basic Recipe:
2-1/4 Cup sifted Flour
1 beaten Egg
2/3 Cup Water
1/2 teaspoon salt
dash of Nutmeg
Make a small dough that will not flow or run off a spoon. Let the batter stand for
about 30 minutes.

Shaping this authentic dumpling is almost effortless when using a spaetzle
maker. Place the tool over boiling water and load the prepared dough in the upper safety
chamber. The little dumplings are formed and drop into the water as you glide the chamber
back and forth, pushing it through the shaping screen. |
After they float to the surface, they are drained and tossed with melted butter and
seasonings and served as a side dish, usually a hearty beef or veal stew. Spaetzle
dumplings are small enough to also be added to soups.
