Chicken Stuffed Portobello Mushrooms

Chicken Stuffed Portobello Mushrooms:


·       3 large portobello mushrooms

·       1 lb ground chicken

·       White onion

·       Pepper jack cheese (or any cheese you prefer)

·       Avocado

·       Soy sauce

·       Medium sized tomato

·       Salt

·       Pepper

·       Crushed red pepper



·       Preheat oven to 400 degrees

·       Wash the mushrooms and remove the insides into a separate bowl

·       In the same bowl as the insides of the mushrooms, add ½ diced onion, 1 tablespoon soy sauce, ground chicken, and salt, pepper, and crushed red pepper to taste – mix well

·       Stuff the mushrooms with the chicken mixture

·       Insert the stuffed mushrooms into the oven for 30-35 minutes

·       Remove the mushrooms from the oven and add a slice of pepper jack cheese (or any cheese) and insert into the oven for a few more minutes until the cheese melts

·       Slice an avocado and tomato and add it on top of the melted cheese

·       Serve immediately while still hot
